The aims of this study were to analyze differential effects of tempe flour and tofu flour on serum estrogen and abdomin al fat in ovariectomized female rats. This research was conducted on white female Sprague Dawley strain rats, aged 12 months by using a completely randomized design (CRD). Before the intervention all rats underwent ovariectomy (OVx) were grouped into 4 interuention groups: tempe flour, tofu flour, estradiol, and casein. Point observations made before ovariectomy surgery were baseline-l, three months after ovariectomy (baseline-2), two weeks after the intervention had started, five weeks after intervention, and eight weeks after
intervention. Analysis of estradiolin serum was done by ELISA(EIA-2693). Abdominal fat was removed at post mortem. Data processing and analysis of the average difference between the treatment groups was analysed used One Way ANOVA with Polynomial Contrasts (Post Hoc LSD). Analysis showed that tempe flour had the highest increase in serum estrogen compared to the other intervention groups (tofu flour, estradiol, and casein). The increase ofserum estrogen in the tempe flour group was two times higher than that of the tofu flour group. The tofu flour group had an increase in abdominal fat from baseline-1 compared to baseline-2. This implies that tempe flour could had potential benefit to increase estrogen level of menopause woman; the clinical studies are required.
